Move over kale, seaweed is the hot, new superfood!
Seaweed and other sea vegetables contain beta-carotene, protein, vitamin B12, fiber, and chlorophyll, as well as chlorophylones – important fatty acids that may help in the fight against breast cancer. Additionally, many sea vegetables also have high concentrations of the minerals potassium, calcium, magnesium, iron, and iodine.
All those vitamins and nutrients sound good to me, but wait there’s more….
A 2006 study from University of South Carolina, Columbia, SC demonstrated that seaweed inhibits cancer cells making it an important food to consume in the prevention of both breast and colon cancer as well as an important food to consume in post-cancer wellness.
The study also explains that Japanese women who ate miso soup (a hot water extract of seaweed, miso, and vegetables) at least 6 times a week had half the risk of breast cancer as those that did not consume miso. Seaweed expands to 10 times its weight when refreshed in water becoming even more potent and powerful.
So slurp up some miso and eat your seaweed wrapped sushi! Yum!
